Maar je kan er nog veel meer gerechten mee bereiden zoals bijvoorbeeld kroepoek, puree, gratin, pap, heerlijke frietjes en kroketjes. En wist je dat tapioca-meel ook van cassave wordt gemaakt? Het wordt vaak gebruikt als bindmiddel, maar ook in de populaire bubbelthee, pudding, desserts en als glutenvrije vervanger voor bloem. In Brazili\u00eb worden er pannenkoekjes van gemaakt, die ik onlangs nog proefde op het Vegan Food Fest bij Hofi Cas Cora.<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"et_pb_row et_pb_row_1\">\n<div class=\"et_pb_column et_pb_column_1_2 et_pb_column_1 et_pb_css_mix_blend_mode_passthrough\">\n<div class=\"et_pb_module et_pb_text et_pb_text_1 et_pb_text_align_left et_pb_bg_layout_light\">\n<div class=\"et_pb_text_inner\">\n<p><span lang=\"NL\">Daarnaast worden in sommige landen de eiwitrijke bladeren gebruikt als groente in plaats van bijvoorbeeld spinazie. Maar let op: cassave bevat van nature het giftige blauwzuur. Door het te koken, bakken, frituren, stomen of grillen schakelt u de giftige werking uit. Eet cassave dus nooit rauw! Cassave wordt ook wel yucca of maniok genoemd. Het is een tropische aardappel die rijk is aan voedingsstoffen en zetmeel. De bruine wortelknol komt oorspronkelijk uit Brazili\u00eb en wordt veel gegeten in Afrika, Azi\u00eb en Zuid-Amerika. De cassaveplant kan groeien op zeer arme grond en is ook goed bestand tegen droge periodes. Wat dat betreft dus een ideaal gewas voor ons Cura\u00e7aose klimaat.<\/span><\/p>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"et_pb_column et_pb_column_1_2 et_pb_column_2 et_pb_css_mix_blend_mode_passthrough et-last-child\">\n<div class=\"et_pb_module et_pb_text et_pb_text_2 et_pb_text_align_left et_pb_bg_layout_light\">\n<div class=\"et_pb_text_inner\">\n<p><span lang=\"NL\">Alhoewel cassave weinig mineralen en vitaminen bevat, worden er wel geneeskrachtige werkingen aan toebedeeld. Zo wordt er bijvoorbeeld beweerd dat cassave helpt tegen het prikkelbare darm syndroom en aderverkalking. Het meel zou goed zijn voor het zenuwstelsel en zou stress kunnen voorkomen. Ook de bladeren schijnen goede eigenschappen te hebben. Je kunt ze fijnhakken tot een puree en aanbrengen op het hoofd. Dit zou werken tegen hoofdpijn. Er wordt ook gezegd dat wonden sneller genezen als ze verbonden worden met cassavebladeren. Misschien handig voor als ik weer eens in mijn vingers snijd. Ik houd het in gedachten.\u00a0<\/span>Maar, geen tijd om doktertje te spelen. We gaan aan de slag in de keuken!<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"et_pb_row et_pb_row_2\">\n<div class=\"et_pb_column et_pb_column_1_2 et_pb_column_3 et_pb_css_mix_blend_mode_passthrough\">\n<div class=\"et_pb_module et_pb_text et_pb_text_3 et_pb_text_align_left et_pb_bg_layout_light\">\n<div class=\"et_pb_text_inner\">\n<h3><span class=\"Tussenkop\"><span lang=\"NL\">Cassavechips<\/span><\/span><\/h3>\n<p><span lang=\"NL\">Ik zei het al: ik ben dol op cassavechips. Ze zijn heel makkelijk om te maken en blijven, mits luchtdicht bewaard, dagenlang heerlijk knapperig. Voor dit recept is het handig om een mandoline te gebruiken om de cassave in hele dunne plakjes te schaven, maar een dunschiller werkt ook.<\/span><\/p>\n<\/div>\n<\/div>\n<div class=\"et_pb_module et_pb_text et_pb_text_4 et_pb_text_align_left et_pb_bg_layout_light\">\n<div class=\"et_pb_text_inner\">\n<p class=\"PlatteTekst\"><span class=\"Tussenkop\"><span lang=\"NL\"><strong>Ingredi\u00ebnten<\/strong><\/span><\/span><\/p>\n<ul>\n<li class=\"PlatteTekst\"><span lang=\"NL\">200 gram cassave<\/span><\/li>\n<li class=\"PlatteTekst\"><span lang=\"NL\">een paar takjes tijm<\/span><\/li>\n<li class=\"PlatteTekst\"><span lang=\"NL\">een paar takjes rozemarijn<\/span><\/li>\n<li class=\"PlatteTekst\"><span lang=\"NL\">een paar teentjes ongepelde knoflook<\/span><\/li>\n<li class=\"PlatteTekst\"><span lang=\"NL\">zout<\/span><\/li>\n<\/ul>\n<p class=\"PlatteTekst\"><span lang=\"NL\">extra: plantaardige olie om te frituren<\/span><\/p>\n<\/div>\n<\/div>\n<div class=\"et_pb_module et_pb_text et_pb_text_5 et_pb_text_align_left et_pb_bg_layout_light\">\n<div class=\"et_pb_text_inner\">\n<h3><span class=\"Tussenkop\"><span lang=\"NL\">Bereidingswijze<\/span><\/span><\/h3>\n<p><span lang=\"NL\">Verwarm de olie tot 175\u00b0C. Schil de cassave en schaaf hem op een mandoline of met de dunschiller in plakjes van ongeveer \u00bd mm. Frituur de plakjes ongeveer 2 -3 minuten in de hete olie tot ze krokant en goudgeel zijn. Bak de laatste minuut wat tijm, rozemarijn en knoflook mee. Laat uitlekken op keukenpapier. Bestrooi met een snufje zout en serveer direct met de gefrituurde kruiden en knoflook.<\/span><\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"et_pb_row et_pb_row_4\">\n<div class=\"et_pb_column et_pb_column_4_4 et_pb_column_6 et_pb_css_mix_blend_mode_passthrough et-last-child\">\n<div class=\"et_pb_module et_pb_text et_pb_text_6 et_pb_text_align_left et_pb_bg_layout_light\">\n<div class=\"et_pb_text_inner\">\n<h3><span class=\"Tussenkop\"><span lang=\"NL\">Pone<\/span><\/span><\/h3>\n<p><span lang=\"NL\">Toen ik een aantal jaar geleden op Trinidad was, proefde ik deze heerlijke taart. Pone wordt gemaakt met cassave, kokos \u00e9n pompoen en is dus op en top Caribisch. Schil ondertussen de cassave en snijd de wortel in stukken van 6cm. Snijd elk stuk in de lengte in frieten. Doe als het water kookt een snufje zout in de pan en voeg de cassave toe. Kook gaar in ongeveer 20 minuten. Giet af en laat afkoelen.<\/span><\/p>\n<p><span lang=\"NL\">\u00a0<\/span><span lang=\"NL\">Verwarm ondertussen de olie tot 175\u00b0C. Snijd indien gewenst de vezelige kern uit de frieten en bak ze in de hete olie in 4 minuten krokant en goudgeel. Laat uitlekken op keukenpapier. Bestrooi met een snufje (chili) zout, knijp er een beetje limoen over uit en serveer direct. Ik vind ze zelf heerlijk met chipotle mayonaise.
